Yep that should be safe ... power input: 7.5 - 12.0 VDC or USB powered

Yes that would work, 2.1mm and netduino will cope with 7.5v to 12v DC ... I've literally just done this a few minutes ago although I chopped the connector from an old power lead and joined it to a battery clip.
