I have an attic full of old PC components so I'm pretty confident I will have most, if not all of the required bits'n'bobs to create my own breadboard Ethernet shield. However, I cant find a schematic to make one. Can anyone help with this?

You are trying to make your shield for Ethernet without a dedicated chip? I search a lot for a solution, but the chips like ENC28J60 make the most hard work for us - the machine layer. Many years ago I find in the internet something about do this thing using PIC16F84 (old chip!).
You could use ENC28J60 in your breadboard,and it's nice because mIP project is drived for it! You can take a look at uIP Porting Project.
