Now that I've got my netduino sous vide functional, i was going to try chicken breasts next, but grabbed a flank steak (sold as 'London Broil' in Shoprite) instead. I cooked it at 135F for about 5 hours. Most recipes call for a slightly lower temperature (130-133 i have seen) and much, much longer times (
42 hours, for instance) .. but i am playing it safe temperature wise for now and only had 5 hours to let it cook.
Well, it worked! I did a poor job browning it right before eating it, so the flavor was not nearly as good as it could have been, but it was far and away the least chewy and juiciest steak of this cut I've ever had. I'm going to cook the other half for about 9-10 hours tomorrow and see how it goes. Once I'm a little more comfortable that I am not going to burn the house down I will push the times further.
