Lets see, the Sparkfun Protoshield works fine. So does their GPS shield (in "DLINE" mode, not UART). I haven't tried the XBee shield yet mainly because I can't stand stacking shields.

I have the sparkfun proto, xbee, gps shields, all work fine.
Also the Seeed studio sd card shield works fine with the 4.1.1 alpha firmware.

I have the SparkFUN Joystick shield which requires two mod to work.
1. The 3.3VDC needs to be jumpered to AREF
2. The 5VDC line to the Joystick needs to be cut and replace with a 3.3VDC supply

This shield here seems to work as well:

It lets you plug in 3 wire cables to do the LEDs, piezo, pot, title, etc sensors/switches.

Might work with Netduino?
PoE?!? That's pretty cool. It will probably work (although it never hurts to double-check with the vendor to make sure they support incoming 3.3V signals).
